BALTIMORE—Jimmy Longoria built Mexican on the Run out of his mother’s house ten years ago. Today it’s a multi-location operation held together by family. His mother still makes their flagship birria recipe by hand, and his two brothers cook and run the truck. But for his brother Christopher, the job meant something more.
